An Australian doctor has revealed the recipe for her favourite school lunchbox filler, which is chocked full of spinach and can be made in bulk for the week ahead.

Dr Preeya Alexander, a Melbourne-based GP known as the Wholesome Doctor online, shared the recipe for her spinach and cheese melts on Instagram.

The mum-of-two said both her three-year-old and her primary school aged daughter approve of the cheesy snack and happily eat them cold if they can't be heated up.

'My son has just eaten two after his sports class - they were cold. And my daughter loves them cold too, the cheese is almost more punchy! But you could do a thermos for sure,' she wrote.

'Both my kids ate this as an afternoon snack with my toddler repeatedly singing his version of 'I ate a rainbow',' the doctor said.

'My daughter was proudly declaring that the rainbows count for double because they're homegrown,' she added.

And making the melts is super easy, she explained, and they can kept in the fridge for a few days to make mornings easier.
